Recipe: Sweet White Corn Soup courtesy of Vin 909 Wine Cafe

With a nod and a wink to the ubiquitous "soup of the day," Vin 909 offers a "soup of the moment." This summer, when the local ears ripen, try chef Justin Moore's fresh corn soup.
Sweet White Corn Soup
Kernels removed from 10 ears of corn
1 cup onion
¼ cup green garlic
¼ cup celery
1 cup cream
½ cup butter
1 quart chicken or corn stock
1/8 cup sugar
Salt to taste
In a stockpot, melt the butter and sweat the onions, garlic, and celery. (Sweating means to cook over low heat without browning, just enough to release the flavors.)
Add all the corn, sugar, and stock, and simmer for 20 minutes.
Add cream and bring the mixture back to a boil.
Blend the mixture in a blender.
Strain the soup to remove any undesirable pulp.
Salt to taste.
