What's in season: Cucumbers

Ahh, the cucumber; a vegetable that thrives in high summer heat. Think salads, cucumber water, and, of course, pickles.
Some fresh pickles from the deli department of your grocer, crisp and refreshing, may be just the thing to compliment a nice sandwich, but have you ever thought about making pickles yourself? It may seem daunting or not worth the effort, but pickling doesn't mean canning; they are two different things. I know that until recently, I thought that pickling required sterilizing and making your vegetables shelf stable. Turns out, that's not completely accurate.
You can make fridge pickles without worrying about canning, and as long as you keep them in your refrigerator, they'll be good for months, maybe even longer. I pickled some peppers about a year ago and they are just as good now in my fridge as they ever were; probably better in fact.
