Recipe: Fresh Apple Cider

Sure, you can buy fresh local apple cider, but wouldn't you like to tell your friends at your next party that you made it yourself? It's a great thing to do with those apples you picked at your local orchard last weekend. Thanks to Christopher J. Patrick for this cider recipe.

What you need for 1 gallon of cider

40 freshly picked apples

Personal preference: Your apple cider will taste different depending on the varieties of apple you use. You may use one type or several, and these may be sweet (Red Delicious) or tart (Granny Smith). One of my favorites, the sweet Honeycrisp apple, makes a very fine cider.

Apple corer

Blender or food processor

Cheesecloth

Optional items: lemon juice, fresh ginger, cloves, nutmeg, and cinnamon

Directions

Step 1: Core your apples and cut out any bad bits.

Step 2: Chop the apples into slices or chunks.

Step 3: Blend your apple chunks, peel included, into a fine pulp.

Step 4: Pour the pulp into the cheesecloth, and then squeeze it over a bucket, pitcher, or bowl.

Step 5: Continue squeezing until you've extracted all the juice you can, while retaining leftover pulp in the cheesecloth.

Step 6: Drink it the way it is, or add some of the optional items listed to make it the way you want it. A word of advice: it's best to experiment with flavors in a small cup before adding to your whole batch of cider.
